Ethnic vegan cooking is easy when fresh vegetables and beans are integral parts of a regional diet. In our continuing Ethnic Cooking series, we’ll explore the delicious tastes of Moroccan cooking and become familiar with the variety of spices used such as saffron, paprika and turmeric. Join the Catskill Animal Sanctuary’s Compassionate Cuisine Chef Linda for a hands-on cooking class where we’ll create a full Moroccan meal that’s simple, comforting and most importantly, delicious! All participants will receive a lesson plan, recipes and resources so they’ll be ready to add this regional cuisine to their culinary repertoire.
