Spicy Chickpea Salad
If breakfast is the most important meal of the day, then lunch is definitely a close second. Lunch should be a delight, something to look forward to, and a meal that fuels your body and soul for the rest of the day.
Ingredients
- 1 can chickpeas, drained and rinsed, or 1 1/2 cups cooked
- 1/2 cup peppadew peppers, drained and chopped
- 1/4 cup vegan mayonnaise
- 2 tbsp capers, drained
- 2 tbsp sriracha sauce or other hot sauce
- 2 tbsp Juice from 1/2 lemon
- 1/2 tsp salt
Instructions
- Place all ingredients in a food processor and pulse till roughly chopped and combined. To mix by hand, mash chickpeas in a bowl with a fork or masher first, then add remaining ingredients. Serve or store in a covered container for up to a week.
