Waffle Pizzas
Remember the t.v. commercial for Reese’s Peanut Butter Cups where a silly accident caused one person's chocolate to wind up in another person's jar of peanut butter?
Ingredients
- 1 cup all-purpose flour
- 1/4 cup whole wheat flour
- 2 teaspoons baking powder
Dash of salt
- 1 1/4 cup water
- 2 tablespoons olive oil
- Jarred or homemade tomato sauce
- Favorite toppings
Instructions
- Preheat oven to 375°F. Whisk together dry ingredients in a medium bowl. Make a well in the center and add the water or broth and the oil. Stir to combine then follow instructions for your waffle maker to make the waffles. Waffles can be made a day or two in advance and refrigerated or frozen for up to a month. Using your favorite jarred tomato sauce (or homemade), spread top of waffle with sauce. Sprinkle with vegan cheese, if you choose, and add other toppings. Place waffles on a baking tray lined with parchment paper and bake for about 10 minutes, or until cheese is melted. Serve immediately.
