When people consider going vegan, the main thing that confounds many is the eternal question of “What’s for dinner?” There’s also the notion that vegan cooking is time-consuming, complicated, and expensive. Vegan cookbooks and blogs do little to dispel those myths, leaving newly minted vegans feeling that making dinners takes hours and requires lots of obscure ingredients.
This workshop, presented by the prolific (and self-admittedly lazy) vegan cookbook author Nava Atlas, will show you how to make amazing dinners even when — or especially when — you’ve come home wasted from your day of work. Using natural readymade sauces and other convenient ingredients that can be found in most supermarkets, you’ll learn how to make a healthy vegan dinner any day of the week in 20 minutes — or less! Skip the expensive and caloric take-out and see how easy it is to make full dinners in your own kitchen centered around General Tso’s Tofu, Chickpea Masala, and colorful power bowls. Within the course of an hour, this workshop will demonstrate not just one, but three dinner entrées, including tips on how to round them out into full, balanced meals.
