Whether you’re veg-curious and looking to add more healthy lunch options to your diet, or a longtime vegan seeking fresh and exciting menu ideas to tempt your taste buds, let Chef Sara help you upgrade your midday meal. She’ll demonstrate a variety of recipes perfect for toting to work or school, including sandwich fillings, salads, soup, dressings, dips, and even dessert. Sara will also share her tips for packing your lunch with eco-friendly, reusable materials, and ensuring everything stays at a safe temperature for hours without refrigeration. At the end of class, we’ll sit down together and sample all the recipes, with plenty of time for discussion and questions.
You’ll learn how to make: Tempeh “Tuna” Salad; Marinated Baked Tofu; Asian-Style Quinoa and Chickpea Salad; Southwestern Black Bean Salad; Mushroom Barley Soup; Creamy Ranch Dressing; Lemon-Tahini Dressing; Raw Zucchini Hummus; Maple-Cinnamon Almond Butter Dip; Walnut-Fig Energy Bites.
