A Vegan Thanksgiving Menu

This year at Catskill Animal Sanctuary, we’ll start off our Thanksgiving meal with a double helping of gratitude and then we’ll pile on a hefty serving of compassion before even thinking about all the wonderful foods we can bring to the table as vegans. We are grateful for so many things; the health and well-being of our sweet animal friends who call the sanctuary home, our dedicated and hard-working staff who care so deeply about our mission, the many, many volunteers who give so unselfishly of themselves and their time to make our work possible, our donors who contribute to our efforts so generously, and without whom, we would not be able to continue with this vital work, and of course all the people who are eating compassionately already or who are on the journey. Thank you for reading this blog, for your curiosity about vegan cooking and for your willingness to create compassionate meals…for yourself and for others.

Each year in the Compassionate Cuisine program, we create a vegan Thanksgiving menu for our cooking classes. This year, I’m thrilled that we have this blog so that our menu and recipes can be shared far and wide! Whether you are hosting Thanksgiving dinner or bringing a dish somewhere, I hope you’ll give some of these recipes a try. The menu was designed so that much of it can be done in advance, if necessary, to simplify the day. And while I can’t be in the kitchen with you, please do feel free to email me with questions if I can help you bring compassion to your family’s table this year.
