Roasted Broccoli and Garlic

I'm almost embarrassed to post this as a recipe, it's so simple, but I decided to after an early morning text from a neighbor. In the middle of making carpool arrangements, she mentioned that her boys hadn't stopped talking about the broccoli they had for dinner at our house over a month ago. She asked if I would send it to her. I did "LOL" when I read that because I remembered thinking…did those boys really eat all that broccoli or did they scoop it into their napkins to throw away? My son is a big broccoli fan, but not many kids are asking their parents to get a recipe to make broccoli. Since it's one of the healthiest vegetables you can eat and because two young boys are clamoring for it, here's the "recipe"!

And by the way, it's a great cold-weather dish for kids and adults. When someone has the sniffles, whip up a double batch. Broccoli is loaded with vitamin C and garlic is wonderful for the immune system with its natural anti-viral and anti-bacterial properties.

Ingredients

 1 large head of broccoli
 4 cloves of garlic, peeled
Olive oil
 Coarse salt
 Nutritional yeast (optional)

Directions

Preheat oven to 400ºF. Line a baking tray with parchment paper. Cut the broccoli into bite-sized florets. Peel and cut into pieces any stem you may have. Cut the garlic into very, very thin slices. Spread broccoli in a single layer on the lined baking tray, toss sliced garlic around. Drizzle with olive oil and sprinkle with coarse salt and tablespoon or so of nutritional yeast.

Roast for about 15 minutes, or until the broccoli has started to brown and is tender when pierced with a fork. Remove from oven, gently stir everything together, and serve immediately.
