Pulse the Oreos in a food processor until finely ground. Add the cream cheese and blend until a smooth dough forms.
Line a plate or small tray with parchment. Use a portion scoop or spoon to scoop and roll the dough into truffles. Freeze them for 15 minutes while you melt the chocolate.
To melt the chocolate, heat chips in a small pot over low heat. When they look like about 50% are melted, remove from the heat and stir until smooth. Vegan white chocolate in particular can seize up quickly so avoid overcooking.
Use a fork to submerge truffles into the melted chocolate and return them to the lined tray. Drizzle with opposite color chocolate and, if using sprinkles, use them immediately after dipping so that they stick.
Chill or freeze until ready to serve.
