Beans are Boss!
Beans are boss, which is why beans are honored every year on January 6, National Bean Day.
We’ve got 10 great reasons to eat more beans this year: 1) Nutrition. Beans are loaded with fiber, potassium, magnesium, folate, and iron…nutrients many people don’t get enough of today. Getting nutrients from foods instead of supplements is less expensive and healthier! 2) Research shows there is a correlation between eating beans and a lower risk for heart disease. You don’t need a prescription to get the benefits of lower blood pressure and cholesterol. 3) Beans can help keep you “regular”. Beans contain both soluble and insoluble fiber, so they work double to keep your digestive system running smoothly. The first slows down digestion, which gives you that full feeling and the second helps prevent constipation. In contrast, animal protein contains no fiber at all. 4) Beans are inexpensive and shelf-stable, perfect for stocking your pantry and for easy weeknight dinners. 5) Versatility. From salads to curries, burgers to bowls, beans can stand on their own or be used to create almost anything. Alfredo sauce, vegan butter, cookies…should we go on? 6) Beans are rich in antioxidants, which protect against free radicals that could damage your cells and lead to cancer. 7) With a low glycemic index, beans contain an awesome mixture of complex carbohydrates and protein. Because of this, beans are digested slowly, which helps keep those blood glucose numbers stable. 8) Convenience. Buy beans canned, frozen, or dry. Rinse canned beans to reduce sodium. Soak dry beans overnight then boil for an even more economical approach. 9) Bean-based meals are better for the environment than animal-based meals. Cows are major producers of greenhouse gasses so opt for a delicious burger made from beans or taco filling made from lentils instead of beef. 10) Protein! Yes, beans are one of the best sources of plant-based protein and with so many ways to eat them, you’ll never have to ask yourself THAT question. Oh, and if you’re worried about *ahem*, gas, start slow, and try lentils, split peas, and smaller beans first. Your body will adjust gradually. Trust us!
