Avocado-Cilantro Sauce

Perfectly creamy, tangy and addictive, this Avocado-Cilantro Sauce will elevate salads, empanadas, burritos and tacos to a new level. To really spice things up, add one seeded jalapeƱo. Avocado, which helps raise our "good cholesterol" (HDL), makes this a heart-healthy dip, and by using non-dairy yogurt, there's no cholesterol and no cruelty involved. Store in a sealed container in the fridge for several days.

Ingredients

 2 ripe avocados, peeled and pitted
 ½ cup non-dairy plain, unsweetened yogurt
 ¼ cup cilantro leaves
 2 green onions, chopped
 2 cloves garlic, peeled
 1 teaspoon salt
 1 teaspoon maple syrup
 Juice of 1 lime, about 1 tablespoon

Directions

Place all ingredients in a blender or food processor and blend until smooth. Taste and adjust seasonings. Store in a sealed container with a piece of plastic wrap placed directly on the sauce to prevent browning for 2 to 3 days.
