Easiest Apple Crisp

Standing in line at the grocery store recently, the young lady who was doing the check out noticed a bag of cinnamon pita chips in my pile of groceries. She mentioned that just the other day, there was a demonstration using these chips to make apple crisp. Intrigued, I asked how they were made. The in-store demo was pretty simple; sliced apples with crumbled chips on top, baked. Now there was a dessert I could appreciate–the Easiest Apple Crisp ever! I added a few more ingredients but this was truly a simple dessert. Except for peeling and dicing the apples, it came together in 5 minutes. You can dice the apples with the skin on if you prefer, to save time, and you'll get the added benefits of the fiber in the skin, but only if they are organic please! Served with a scoop of vegan vanilla ice cream, this was the perfect ending to a weekend meal. Just enough cinnamon and sugar without being too sweet. Not only is this a quick dessert, but it works well for breakfast. The chips are only mildly sweet so it tastes healthy and comforting. Try it with a dollop of dairy-free vanilla yogurt.

Ingredients

 6 apples, peeled and diced
 ¼ cup maple syrup
 ¼ cup water or apple juice
 ¼ cup melted vegan butter
 1 tbsp Juice from half a lemon
 1 tsp vanilla
 1 tsp cinnamon
 ½ tsp salt
 1 (8 ounce) bag of cinnamon pita chips

Directions

Preheat oven to 350ºF. Place apples in a large bowl. In a smaller bowl, stir together syrup, juice, melted vegan butter, lemon juice, vanilla, and salt. Pour mixture over apples and toss to coat. Sprinkle flour over apples and stir to combine.

With your hands, crumble the pita chips into smaller sized pieces. Arrange enough to cover the bottom of an 8-inch square casserole dish. Gently pour apples over pita crumbles. Arrange remaining crumbles on top of apples. Cover with foil and bake for about 20 to 25 minutes, until apples are soft. Remove from oven and serve warm with vegan vanilla ice cream.
