Golden Gravy

Honestly, sometimes a good gravy elevates a great meal to an awesome experience! This Golden Gravy is super-simple and yet so good, you may want to put it on everything. Start by making a roux, which is just a fancy term for a thickener for gravies and sauces. Cook equal parts fat and flour and you've got a roux. To it, you'll add your seasonings and liquid to create a luscious, thick gravy that's perfect on anything and everything. You can make the gravy more complex by sautéing mushrooms and onions first, but this is so smooth and velvety, why mess with a good thing? Maybe I'm weird, but if (and that's a big IF) there is any leftover, I pop it in the fridge and the next day when it's chilled, I eat it with a spoon. Weird? Maybe. Yummy? Definitely!

Ingredients

 2 tablespoons olive oil oil
 2 tablespoons all-purpose flour
 1 cup low sodium vegetable broth
 ½ cup nutritional yeast flakes
 3 tablespoons tamari or soy sauce
 2 teaspoons onion powder
 1 teaspoon garlic powder
 1 teaspoon white pepper

Directions

In a medium saucepan, heat oil over low-medium heat and stir in flour. Cook while stirring for 3 to 5 minutes. If you want a darker gravy, cook a few minutes longer until the mixture starts to brown.

Slowly add in the broth while stirring to ensure there are no clumps. Whisk in nutritional yeast, tamari, onion and garlic powders, and white pepper. Continue to cook, whisking continuously, until mixture is thick and velvety. Taste and adjust seasonings, add more broth to thin if necessary. You’re finished when the mixture is glossy and coats the back of a spoon.
