Waffle Pizzas

Remember the t.v. commercial for Reese’s Peanut Butter Cups where a silly accident caused one person's chocolate to wind up in another person's jar of peanut butter? Peanut butter and chocolate have come to be known as perfect compliments to each other. Well, I didn’t actually stumble into a vat of tomato sauce while eating breakfast, but my silly accident involving the union of two unlikely foods still ended with a lucky outcome. I forgot to buy pizza dough before inviting people over for...pizza. Yikes. With no time to change plans or come up with something new, I noticed the waffle iron we used for breakfast that morning sitting on the counter and thought to myself: this might be a solution. And it was. I used our regular breakfast waffle recipe, but omitted the sweet ingredients; maple syrup, vanilla, coconut milk and cinnamon; until what we were left with was essentially a savory waffle. Worked like a charm. Waffle Pizzas were born.

Believe it or not, waffles are the perfect canvas for pizza; Imagine your favorite tomato sauce pooling up in the waffle craters so that when you bite into it, you get a burst of tangy flavor. Waffles are also sturdy enough for your wildest topping ideas; I made ours with Daiya Mozzarella Shreds, black olives, roasted garlic broccoli, artichoke hearts and shiitake bacon crisps. The waffles can be made in advance so this is a great recipe for families--I think it's pretty much a given that kids are going to love a food that incorporates both waffles and pizza. Put out bowls of your favorite toppings and let everyone make their own creation, then put the waffles in the oven for 10 minutes at 375° to quickly reheat.

You may never look at pizza the same way again!

Ingredients

 1 cup all-purpose flour
 ¼ cup whole wheat flour
 2 teaspoons baking powder
Dash of salt
 1 ¼ cups water
 2 tablespoons olive oil
 Jarred or homemade tomato sauce
 Favorite toppings

Directions

Preheat oven to 375°F. Whisk together dry ingredients in a medium bowl. Make a well in the center and add the water or broth and the oil. Stir to combine then follow instructions for your waffle maker to make the waffles. Waffles can be made a day or two in advance and refrigerated or frozen for up to a month.

Using your favorite jarred tomato sauce (or homemade), spread top of waffle with sauce. Sprinkle with vegan cheese, if you choose, and add other toppings. Place waffles on a baking tray lined with parchment paper and bake for about 10 minutes, or until cheese is melted. Serve immediately.
